Elmsfeuer is an off-dry sparkling rhubarb wine, made from Danish rhubarb of the Elmsfeuer variety. The Nordic climate gives Elmsfeuer rhubarb ideal conditions: the swing between cool nights and long, bright days draws out a slow ripening that develops a remarkable aroma and a wholly unique acidity profile. The must is fermented on the pulp at low temperature, followed by a second fermentation in the bottle. Aged a minimum of 9 months before release.
Serve Elmsfeuer chilled. It makes an unexpected and refined aperitif, or a perfect companion to summer salads and dishes built on tender young vegetables — asparagus, fjord shrimp, langoustine, air-dried ham, tapas, and goat cheese.
